  1. Pat steaks dry and sprinkle both sides with salt, pepper, minced garlic and a squeeze of lemon.
  2. Heat butter and olive oil in a large skillet over high heat until hot but not smoking, Add steaks then saute 2-3 minutes per side for medium.
  3. Squeeze more lemon juice over top before removing from heat. Transfer steaks to a plate and serve.
