Lemon Brownies

Ingredients

• Wheat flour

  White, all-purpose, unenriched

  2 cup or 250g

• Aspartame

  Sweeteners, tabletop, equal, packets

  4 tbsp or 42g

• Salt

  Table

  ½ tsp or 3g

• Baking soda

  Leavening agents

  ½ tsp or 2g

• Egg

  Whole, fresh eggs

  4 extra large or 224g

• Plain yogurt

  Low fat, 12 grams protein per 8 ounce

  ½ cup or 123g

• Flaxseed oil

  6 tbsp or 82g

• Lemon zest

  1 lemon or 4g

• Lemon juice

  Raw

  4 tbsp or 60g

• Cream cheese

  8 oz or 227g

• Powdered sugars

  1 ½ cup sifted or 150g

Directions

1. Preheat oven to 350°F. Line an 8x8-inch square pan with foil, leaving extra for 'handles.'
2. Combine all ingredients except cream cheese and powdered sugar in a bowl. Stir by hand until smooth, about 30 seconds.
3. Spread batter in prepared pan and bake for 20 minutes. Allow to cool in the pan for 5-10 minutes before lifting out.
4. For the glaze: Mix cream cheese and powdered sugar until smooth. Apply to cooled brownies.
