Directions

  1. Preheat oven to 350 degrees F.
  2. Clean the leeks well to remove and debris.
  3. Slice thinly and sauté in butter over medium heat until tender, 5-10 minutes.
  4. Beat the eggs, cream, salt, and pepper in a small bowl.
  5. Put about 3/4 of the cheese in a greased pie plate or quiche pan, evenly spread the leeks over the cheese.
  6. Pour in the egg mixture; top with the remaining cheese.
  7. Bake for 30-35 minutes, until golden brown on top. Let stand a few minutes before slicing.
