  1. Cut the zucchini into long spaghetti-like strips using a spiralizer fitted with a shredder blade, a mandolin fitted with a julienne blade, or a peeler. If using a spiralizer, trim the strands to about 8 inches for easier eating.
  2. Whisk together soy sauce, balsamic vinegar, hoisin sauce, water, chili sauce, sugar, and cornstarch in a small bowl; set aside.
  3. Season chicken with salt and pepper. Heat oil in a large, deep nonstick pan or wok over medium-high heat. Cook the chicken until browned and cooked through, about 4 to 7 minutes. Set aside.
  4. Reduce heat to medium, add sesame oil, garlic, and ginger to the skillet. Cook until fragrant, about 30 seconds. Add the bell pepper, stir in the soy sauce mixture, and bring to a boil; reduce heat and simmer until thickened, about 1-2 minutes.
  5. Stir in zucchini noodles and cook, mixing for about two minutes until just tender. Mix in chicken and divide between 2 bowls; top with peanuts and scallions.
