Directions
- Cut the zucchini into long spaghetti-like strips using a spiralizer fitted with a shredder blade, a mandolin fitted with a julienne blade, or a peeler. If using a spiralizer, trim the strands to about 8 inches for easier eating.
- Whisk together soy sauce, balsamic vinegar, hoisin sauce, water, chili sauce, sugar, and cornstarch in a small bowl; set aside.
- Season chicken with salt and pepper. Heat oil in a large, deep nonstick pan or wok over medium-high heat. Cook the chicken until browned and cooked through, about 4 to 7 minutes. Set aside.
