Directions
- Bring a large pot of water to a boil. Sprinkle with a little salt. Add two chicken breasts to water and let cook for 30 minutes or until your thermometer tells you their internal temperature is 180 degrees. Let chicken cool for about 10 minutes.
- In the meantime, cook your four strips of bacon. You can do it on the stove, or use the microwave. They should take 5 minutes in the microwave. You want them well-cooked so that you can crumble them later. When your bacon is done, put it in the refrigerator to cool.
- Wash your head of lettuce. Cut off the bottom of your head of lettuce, then cut it in half, starting from the top towards the root. Plate your two lettuce wedges on two plates (or save one for later).
- Using a fork, pull apart the chicken into strips, like you would pulled pork. Add chicken to a small pot on the stove over medium heat. Top the chicken with your buffalo sauce, and stir until hot.
- Top your lettuce wedges with bleu cheese dressing and blue cheese crumbles. Take bacon out of the fridge and crumble over your two wedges. Add your buffalo pulled chicken to the plate and top with some more bleu cheese crumbles. Enjoy!
