Ingredients
- Provolone cheese

Directions
- Slice onion and bell pepper.
- Gently beat the eggs and 1/2 of the olive oil in a bowl
- Heat a nonstick skillet, over medium heat. Cook egg mixture (splitting and repeating if making more than 1 serving) until set. Set aside.
- Heat rest of olive oil saute vegetables until softened. Set aside.
- Season the beef with salt and pepper and saute over medium high heat until cooked through. Add veggies to the meat.
- Fill the omelets by layering provolone with meat and vegetables.
- Fold omelets over and place back in the skillet on medium and cover to melt the cheese.
