Directions
- Grate zucchini and squeeze out as much liquid as possible. Place in a large mixing bowl. Chop spinach finely and add to bowl.
- Drain cans of chicken and add to bowl. Shred chicken with a fork so it is broken up.
- Add in grated parmesan cheese and mix well. Slowly add in the egg. Form patties (around 4-5 with full recipe.)
- Heat oil in a frying pan on medium heat. When hot, add your chicken patties and cook for 4-5 minutes, before carefully flipping and cooking for a further 4-5 minutes, until cooked through.
- Remove from the heat and serve immediately. Enjoy!
