Ingredients

  • Beef short loin

    T-bone steak, separable lean and fat, trimmed to 0" fat, usda choice, cooked, broiled

    18 oz or 510g

  • Salt

    Table

    1 tbsp or 18g

  • Pepper

    Spices, black

Directions

  1. Bring steak to room temperature.
  2. Heat heavy non-stick (cast iron) pan to high heat, to the point of light smoking. Make sure exhaust fan is on high! You’ll need it!
  3. While pan heats, pat steak dry on each side. Apply generous amounts of salt & pepper to taste on each side.
  4. Using tongs or spatula, place steak in heated pan. Resist any urge to touch! Let sear 3 minutes, flip, and cook another 3-4 minutes for medium rare.
  5. Remove from pan and enjoy, hot!
