Beef short loin
T-bone steak, separable lean and fat, trimmed to 0" fat, usda choice, cooked, broiled

Directions
- Bring steak to room temperature.
- Heat heavy non-stick (cast iron) pan to high heat, to the point of light smoking. Make sure exhaust fan is on high! You’ll need it!
- While pan heats, pat steak dry on each side. Apply generous amounts of salt & pepper to taste on each side.
- Using tongs or spatula, place steak in heated pan. Resist any urge to touch! Let sear 3 minutes, flip, and cook another 3-4 minutes for medium rare.
- Remove from pan and enjoy, hot!
