- Peel, slice (crosswise - horizontal, around 0.5/1cm, as you prefer), de-seed 1 medium sized squash (approx. 2lbs/900g)
- Put all the slices in a bowl and season with olive oil (don't use too much), salt, black pepper and cayenne pepper. Use your hands to flip around the slices and ensure good seasoning all around the squash slices
- You can do the following in a large skillet or, preferably, in a charcoal grill. Bring it up to medium-high and place the slices around the surface (to not overlap slices so every parte cooks evenly).
- Cook for about 10-15, 20min, depending on how thick you made the slices and flip to the other side and cook for the same amount of time. The slices should be tender but with a light crisp and dark goldenish color with small splashes of black.
