- Preheat the oven to 180C / 350F and line a baking tray with parchment paper.
- Add the peas to a medium saucepan, cover with water and boil, according to package instructions and drain well.
- Heat the olive oil in a frying pan and saute the diced onion and minced garlic for a few minutes, until softened.
- Add the peas, onions and garlic to a food processor and pulse until it becomes a thick paste.
- Stir in the chickpea flour, baking soda, and salt.
- Scoop about 1 tbsp of the mixture, roll into a ball and press down slightly to create a patty shape on the baking sheet.
- Brush with fritters with olive oil.
- Bake for 15-18 minutes until golden brown, flipping them over half way.
