Directions

  1. Evenly coat baking sheet with 2 tbsp olive oil.
  2. Mix 1 tbsp olive oil with 3/4 cup water.
  3. Add dry ingredients to standing mixer with dough hook attachment: bread flour, yeast, sugar, salt. Mix together with wooden spoon.
  4. Turn mixer to low and add water mixture gradually until dough starts to come together (about 1 minute).
  5. Increase speed to medium-low for 10 minutes.
  6. Plop dough onto prepared sheet pan. Turn it once (to get coated in olive oil).
  7. Pad out dough to about a 10" x 6" rectangle.
  8. Cover with plastic wrap, let sit for 1-1 1/2 hours until dough doubles and bubbles.
  9. Work dough out to edges of pan. Cover back up with plastic wrap and let sit for another 45 minutes.
  10. Drain diced tomatoes.
  11. Heat oven to 500 degrees Fahrenheit and place oven rack on bottom.
  12. Add drained diced tomatoes to a large mixing bowl along with 1 tbsp olive oil, garlic, oregano, salt. Mix together with a wooden spoon.
  13. In a medium bowl, mix mozzarella and Parmesan cheeses together.
  14. Add cheese to dough first, sprinkling evenly and leaving a half inch edge on side, then add tomato mixture.
  15. Bake pizza for about 15 minutes until top is bubbly and crust is crisp.
  16. Gently loosen pizza from pan and slide onto cooling rack for about 5 minutes.
  17. While cooling, sprinkle basil on top.
  18. Move to cutting board and cut into 12 squares with pizza cutter.
