Directions
- Whisk the eggs in a bowl with pepper and half of the butter, broken into pieces. Chop the green onion.
- Heat the remaining butter in a skillet over medium-high heat until it melts and begins to bubble.
- Pour the eggs into the skillet, cover, and reduce heat to medium. Cook for about 2 minutes.
- Add the gouda slices and half of the chopped green onion on top of the eggs. Cover and let the cheese melt.
- Fold the eggs to form an omelet, place on a plate, and garnish with the remaining chopped green onion.
