  1. In a large non-stick skillet, heat two-thirds of the olive oil over medium heat and sauté the garlic until golden, about 1 minute. Add the salt, black pepper, red pepper flakes, and parsley and stir.
  2. Add the crushed tomatoes and vegetable broth, then bring to a boil. Reduce heat, add the basil, and simmer for 5 minutes.
  3. Gently drop in the eggs, keeping the yolks intact, and top with cheese. Cover and simmer on medium-low for 10 to 15 minutes, or until the egg whites are cooked through and no longer runny.
  4. Finish with the remainder of the cheese and remaining olive oil. Serve with crusty baguette and enjoy!
