Directions
- Heat the tortilla in the microwave on high for one minute.
- Heat a small skillet over medium heat and coat it with cooking spray. Sauté the mushrooms and pepper for two minutes.
- Stir in the spinach and sauté for another one to two minutes, or until wilted.
- Add the egg whites to the skillet and cook, stirring often, until they are set, about two minutes.
- Place the egg scramble in the center of the tortilla. Top with the crumbled feta and sun-dried tomatoes.
- Fold up one end of the tortilla, then both sides to wrap. Serve immediately or wrap in foil and take to go.
