  1. Pour the water in a large saucepan. Cover with a tight fitting lid, and place over high heat. Once water starts to boil, pour in the quinoa, reduce heat to low, and cover. Simmer until the water has been absorbed, about 15 – 20 minutes. Transfer the quinoa to a large mixing bowl and place in the refrigerator until cold.
  2. Once the quinoa is chilled, stir in the bell peppers, red onion, curry powder, cilantro, lime juice, sliced almonds, carrots, cranberries, salt, and pepper.
