- Pork and beef chorizo

Directions
- Heat olive oil in a large cast iron pan or skillet over medium heat. Add the ground chorizo and cook until browned, about 8 minutes. Remove and set aside.
- Add the diced onion and bell pepper to the pan and sauté until onions are translucent, about 5 minutes. Stir in garlic and spices, cooking for an additional 1 to 2 minutes.
- Return chorizo to the pan with diced tomatoes. Simmer for 15 minutes until thickened.
- Create wells in the mixture and crack an egg into each. Cover and cook until whites are set, 6-10 minutes.
- Remove lid, sprinkle with cheese and cilantro. Serve immediately.
