- Heat the oil in a large non-stick fry pan over a medium heat. Add in the chicken, season with salt and pepper and cook for 2-3 minutes, or until the chicken starts to colour. Mix in the leeks and garlic and cook for a further 2-3 minutes.Add the flour and thyme and stir to coat all the ingredients. Pour in the white wine, stock, mushrooms, zucchini and beans and transfer to a slow cooker for 6-8 hours.Alternatively, if cooking on the stove, bring to the boil then turn down to a gentle simmer and cook for 40-45 minutes, or until the vegetables are tender and the sauce is rich and thick.Serve with couscous or rice.
