- Bring a medium pot of lightly salted water to a boil.
- Thoroughly rinse the cilantro and limes, then pat them dry. Place a colander in the sink.
- Stem and coarsely chop the cilantro. Quarter the limes.
- Mince the garlic. Trim and thinly slice the white portions of the green onions. Slice the remaining green portions on an angle.
- Coarsely chop the peanuts.
- Rinse the chicken breasts and pat dry. On a separate cutting board, slice the chicken into ¼” strips.
- Add the noodles to the boiling water and cook for 4 minutes, stirring often.
- Drain the noodles in the colander and run cool water over them. Transfer the noodles back to the pot, toss with 1 tsp of olive oil to prevent sticking, and set aside. Running cool water over pasta stops the cooking process, which keeps the noodles from getting mushy.
- Heat 1 tsp of olive oil in a medium non-stick pan over medium-high heat.
- Season the sliced chicken with 1 tsp of salt and 1 tsp of pepper.
- Add the chicken to the hot pan and cook for 5-6 minutes, or until lightly browned and the chicken reaches a minimum internal temperature of 165°F. Transfer the chicken to a plate and wipe the pan clean.
- Return the pan to medium-high heat and add 1 tsp of olive oil, garlic, white portions of green onions, and carrots. Cook for 2 minutes, or until the vegetables just begin to soften.
- Add the noodles, chicken, sweet chili sauce, and fish sauce to the pan. Stir and toss until all ingredients are combined and heated through, about 2 minutes.
- Place the finished pad thai on a plate or in a shallow bowl. Garnish with the peanuts, green portions of green onions, cilantro, and lime quarters.
