  1. Bring a medium pot of lightly salted water to a boil.
  2. Thoroughly rinse the cilantro and limes, then pat them dry. Place a colander in the sink.
  3. Stem and coarsely chop the cilantro. Quarter the limes.
  4. Mince the garlic. Trim and thinly slice the white portions of the green onions. Slice the remaining green portions on an angle.
  5. Coarsely chop the peanuts.
  6. Rinse the chicken breasts and pat dry. On a separate cutting board, slice the chicken into ¼” strips.
  7. Add the noodles to the boiling water and cook for 4 minutes, stirring often.
  8. Drain the noodles in the colander and run cool water over them. Transfer the noodles back to the pot, toss with 1 tsp of olive oil to prevent sticking, and set aside. Running cool water over pasta stops the cooking process, which keeps the noodles from getting mushy.
  9. Heat 1 tsp of olive oil in a medium non-stick pan over medium-high heat.
  10. Season the sliced chicken with 1 tsp of salt and 1 tsp of pepper.
  11. Add the chicken to the hot pan and cook for 5-6 minutes, or until lightly browned and the chicken reaches a minimum internal temperature of 165°F. Transfer the chicken to a plate and wipe the pan clean.
  12. Return the pan to medium-high heat and add 1 tsp of olive oil, garlic, white portions of green onions, and carrots. Cook for 2 minutes, or until the vegetables just begin to soften.
  13. Add the noodles, chicken, sweet chili sauce, and fish sauce to the pan. Stir and toss until all ingredients are combined and heated through, about 2 minutes.
  14. Place the finished pad thai on a plate or in a shallow bowl. Garnish with the peanuts, green portions of green onions, cilantro, and lime quarters.
