Directions

  1. Grate the cauliflower (cut into florets) until it resembles rice. (You can also use a food processor.)
  2. Place the cauliflower in a saucepan, add the water, and heat over medium heat until the cauliflower is tender, 5-7 minutes.
  3. Meanwhile, zest the lime into a small bowl and then squeeze the juice from the lime into the bowl. Stir in the cilantro and olive oil and whisk together well.
  4. When the cauliflower is tender, pour the lime and cilantro mixture into the pan and gently stir to blend.
  5. Serve hot as a side dish.
