Ingredients
Cheddar cheese
1 cup, shredded or 113g
Turkey bacon, unprepared
4 slice 6 oz pkg or 32g
Directions
- Prepare a mini muffin tin with cooking spray and set aside. Cook the turkey bacon to your desired crispiness, then drain and chop it.
- Preheat the oven to 400°F. Lightly pulse the almonds and cauliflower in a food processor until they are broken up but not blended into flour.
- Add the eggs and Greek yogurt to the processor and lightly pulse to combine. Transfer the mixture to a bowl and stir in the remaining ingredients.
- Using a cookie scoop, spoon the batter into the prepared mini muffin tin.
- Bake for 20-25 minutes, until the tops are slightly browned and cooked through. Enjoy!
