Directions
- Heat skillet, once hot add coconut oil. Add chicken & saute until brown (about 10 min) remove chicken & place on a plate. Add 2 cups of water to skillet scrapping pan to remove flavorful bits. Cover & simmer for 15 min. Meanwhile cut up your veggies & then add to the skillet & let cook for 2 min. Add tomatoes, sea salt(if desired) black pepper, cumin & cook for 5 more min. Return chicken to skillet & add calabaza(squash) Cover & simmer for 15min or until calabaza & chicken are tender and cooked.
