Directions
- Wash the eggplant and remove the ends. Cut into 8 slices, each 1/8 inch thick.
- In a 13x9-inch glass baking dish, whisk together soy sauce, lime juice, honey, garlic, ginger, and red pepper flakes. Add the eggplant slices, turning to coat. Cover and marinate for at least 20 minutes, turning once.
- Preheat the broiler.
- Lightly oil the rack of a broiler pan. Broil the eggplant 5 to 7 inches from the heat, basting frequently with the remaining marinade and turning once, until tender and browned on both sides, about 10 to 15 minutes.
