  1. 1 After pounding chicken breasts, rub them with seasoning salt. Cover and refrigerate for 30 minutes. 2 Preheat the oven to 350°F. 3 Cook bacon in a large skillet over medium-high heat until crisp. Transfer bacon to a paper towel-lined plate and set aside. Leave bacon fat in skillet. 4 In a medium bowl, mix mustard, honey, mayonnaise, and onion flakes. 5 Warm bacon fat over medium heat. Add chicken and cook until browned, about 3 to 5 minutes per side. 6 Transfer chicken to a 9-inch by 13-inch baking dish. Brush chicken with honey-mustard sauce, followed by adding a layer of mushrooms and bacon. Sprinkle with cheese. 7 Bake until cheese melts and the chicken juices run clear, about 15 minutes. Garnish with parsley and serve.
