Directions
- Sift together the flour, baking soda, ginger, and cinnamon into a clean bowl. Add the butter in chunks.
- Using your fingers, rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
- Gently microwave the syrup to loosen its consistency. Once cooled down a bit, add the egg and lightly beat together.
- Pour the syrup and egg mixture into the flour mixture and combine with a plastic spatula.
- Turn the combined mixture onto a lightly floured surface and knead the dough until soft. Wrap the dough in cling film and refrigerate for 15 minutes.
- Preheat oven to 350°F (180°C). Line two baking trays with baking parchment.
- Remove the dough from the fridge. On a lightly floured surface, roll out the dough to 0.25 inches (0.5 cm) thick.
- Using a cookie cutter, cut the dough into desired shapes. Place them on the baking trays, leaving space for spreading.
- Bake for 12-15 minutes, or until lightly golden brown. Remove from the oven and let cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
